I've read, here I think, that there was a change at some point in the thickness of the seals and BJ's seals fit the later models.

There are concrete dyes but they are acidic and will weaken the grout. Might try Rit dye for clothes. Have lotsa space under the stove,...

So the new grout is too light. Any proven ideas on making it dark grey?

The stuff the major grout makers sell is paint marketed as dye. Wears and may peel.

I put in Lexus seats. Major cutting of the floor to get them down to the same height. Doors were off which really helps. If they are coming off for paint consider removing them now.

I drilled a hole in all the hinges through the body before removing them for paint.

If you don't want to repair the hinge there're two bolts holding the upper hinge to the door. Loosen them and raise the door.

Or lower the strike on the jamb.

Whichever keeps the body lines...
