Which engine
Looking to swap the 360 and transmission out of my 87 waggy. Which engine
And transmission combos have people used? I am thinking a
Newer Fuel injected v6 would have just as much power as the old girl
Has now.
Any suggestions?

How near are you thinking? Most 90's to mid 2000's V6's had more HP than a smogged out 360, but far less torque. A few mods on the 360 can really wake it up. Unless you are looking at going with a very modern (like last 2 years) V6 you are not going to gain much power, and the fuel conomy will only be marginally better. Although if your engine has a whole lot of miles on it and is getting tired, it could very well be a boost over that.
But you are looking at putting a lot of money into the setup.
But if I was to do it, and try to do it cheap, it would probably be a 4.0L V6 from a Ranger or Explorer with the transmission and t-case with it. They make roughly 200hp and 240lb ft of torque, and you can buy them from a yard for a song.
The GM 4.3L isnt half bad either. Makes a bit less power, but also very common.

The HO 4.0 Jeep straight six in later XJ's and ZJ's isn't a bad option either, you can pick up a late 90's XJ with decent drivetrain and a crap body for pretty cheap about everywhere you go in the nation and have the full harness, fuel pump, etc...to make the swap viable. Motor mounts for this engine are easily sourced and they make pretty decent power as well. Plus, in the Archives section of this site, there are several threads covering this swap, giving you an active reference for what is involved and special issues to address. Plus tons of them came with NP 241 t-cases, which are a popular swap option. Have fun, and good luck!!

If you want torque, 6 cyl is the way to go.
