I've got around 5K miles on my rebuilt and mildly modified 360, K8600 cam, roller timing set, 4BBL carb, standard CR cast pistons, and maybe most importantly, the crank was ground to the high (tight) side of the tolerance, so oil clearance was near minimum at assembly.

I intend to change to Mobil 1 when the engine is fully broken in.

Is it time?

Yup, 5k is about the time to change over if you are going to.
One thing, are you going to tow anything relatively heavy? If so, I would make a run or two with that then change the oil over.

AL we have developed a AMC specific oil in mineral and synthetic, and because you are my neighbor I am going to give you free shipping when it comes out, but if you want to switch to synthetic no better time than now, you may experience a little oil leak but by the second oil change you will find no more leaks abd that motor should last a long long time

I am in the same boat as Al for my new AMC 360. What weight and vicosity would you recommend?

What about oil change interval?

I am running synthetic in my daily driver and change every 5,000 miles. Dealer recommends 7,500 but I feel this is a little too long.

I only drive my Wag on the weekends.
