Hey 86 Grand. Remember that a race motor build up will not work great on a truck used for off road. Most race motors produce their horse power at high rpm. To get the speed you need to run a loose converter too. Are you looking to make your truck go FAST or make it good for off road.
Lots of the stuff you do to a motor to help it off road will cause it to produce low end torque. This low end torque will actually help you on the street since it is torque that gets you moving.

There's a good site for AMC questions, and although they are primarily car guys, they welcome Jeepers as well.
They are a lot like this site, as far as being mostly very friendly and informative, but focused on cars.

Hey 86. Yeah. If you want a good off roader stick with a good low end torque setup. Big horse power is fun but torque gets you moving. Other advantages of NOT building a 'race' motor for an offroad truck:
1. It will break down less.
2. It will cost less
3. It will idle better
4. Good vacuum will help with the brakes.
This assumes typical off road behaviour moderate speeds, hills, mud, etc. If you are going to run a Baja then you need a fast motor.
