What is the largest tire size I can put under my stock Jeep Cherokee S (Old Ben) without lifting, and how much lift would be required to put 33X11.50X15's under the old beast.

The amount of lift required depends on what type of driving you put your FSJ thru. Everyone has differnt taste when it comes to tires and lift.
When I bought my Wagoneer it had 31" tires and 3" body lift. Now I have 32" tires which are big enuff for the wheel'n I do.
I belive you could run 31" with a stock setup but you won't have much room for wheel travel off-road.

if its a wide track, you can fit up to 31's with no problems. 32's will fit, but they'll rub.

Now when you say "they'll rub", are you talking at full articulation, or at normal drving conditions. I have an '82 J-10 and just got some barely used 32" BFG MT's really really cheap. Was hoping they'd fit??

My 79 WT has 31's on the stock, somewhat worn out suspension. They only rub under extreme articulation off road. A buddy of mine ran 33's with no lift while he was waiting for his new suspension to arrive, and they rubbed pretty bad on sharp turns, etc, so 32's would probably be somewhere in between. Try it and see.
