My 78 does not have a return fuel line. Is this something I need to restore? I read where it may help with vapor lock problems, is this correct?

The return line is not necessarily carb specific. I have a return line also, but my carb is a 2100.

I have a 2 barrel on a 360 does that automaticaly mean 2150? I also have two tanks where do I route the return line?

M1Garandfan ... I would hookup the return line to the tank you use the most.. call it tank (A). When you run on the other tank (B) some of the fuel is going to drain into the tank A with the return line. This means tank (B) will run out of gas sooner because some of the fuel is going into tank (A)...
The return line can help the fuel pump by removing vapor and engine-heated gasoline from the Pressure side of the pump... Use a three nipple filter close to the carb and the little nipple up, facing the carb and hooked to the return line... Keep the return line and all others away from heat sources...

I have a electric fuel switch, should I get a different one that will divert the returning fuel to the tank I am currently using?

If the switch is like the one I had they are prone to leakage with age .. Hummmmm... plus the extra plumbing. I just return mine to the main tank and remember to switch back to the main when tank (B) is empty. I almost forgot one time and nearly started walking.. .

How close should the fuel filter be to the pump??

That reminds me. I have an inline filter in the normal place on the motor between the pumb and the carb. Then I have two more on the frame one for each tank just before the switch. Is this a problem? To many filters I mean.
