Would putting a '74 Matador 360 in a '87 GW require any modifications, or is it a straight swap?

It should be a straight swap, using all of your accesories from the Jeep.

Don't they use different flywheels or something???

Yes, you'd need to use the flexplate that is in your Jeep as of now.
