Got the truck cheap, hasn't been driven more than 5 miles in the last year. When you start rolling in any gear, you hear a couple pops and then as you start moving, it sounds almost like you are dragging something and you can feel a little vibration (not dragging anything). Fluid levels are good and U-joints appear good. Ill probably just drive it until it breaks, but I thought I would check and see if there was anywhere to look first. Its an 84 Grand Wagoneer 360 auto

Have you checked to make sure that the rear brakes are not locked up. That what it sounds like to me. Pull the rear drums and check the brakes.

I am actually starting to lean toward wheel bearings. How difficult is it to change wheel bearings on these things?

Not hard at all; you will need a special 4-prong socket to remove and reinstall the locknuts for the front hub, but everything else is basic handtools. Well, except for the rear-wheel bearings, but in that case you just take the whole axleshaft out (it's only four bolts once the wheel is off) and have the shop replace the bearing and the retaining ring.

I would replace the U-joints they usually are the popping sound you are talking about when you first take off, if they are greaseable try that, but even if it stops I would still replace them, they are cheap....
