My '91 GW HESITATES WHEN I APPLY GAS FROM IDLE.
--Is it an accelerator pump problem?
--Is this typical of the stock carb and that's why so many owners upgrade to Edelbrock or TBI?!
--If I buy a new Holley 2300, can I expect better
throttle response?
--Or, is it a spark problem, which the TFI upgrade rectifies?

I know there are ways to tune your carb to get rid of that problem but I don't remember how it's done. I went to TBI for that very reason, only to find out that my hesitation had nothing to do with the fuel system. First, I had a leak in the intake manifold - vacuum was erratic and created some delay. Second, and more importantly, my timing chain had an inch of slop in it, so no matter how much I tuned things I was going to get hesitation and stumbling.
I'd check the normal stuff first though. I'm sure someone will tell you where to look pretty soon here. As I was told, when you hear hoofbeats look for horses not zebras.

2 things I'm aware of.
1) Accelerator Pump
2) Vacuum advance

I'd guess that you're runnin' too rich, but it's hard to say since I'm not there to fiddle with it.
what do your plugs look like? their color will give you indication of too lean or rich. then it might be easier to diagnose.
