Ok, first on the list of problems, what/ where would be causing steam(coolant) to be coming from the rear of my '79 Chero, 360? Can't wait to get this rig on the road!

Is this a new engine build?
My first thought is the intake manifold gasket. The water jacket's ports flow trhough the ends of the heads/intake right next to the edge of the ends of the intake. Those could be leaking out - you should see a little white scale where it's coming out. Worse, it could be the back of the heads, but that one seems less likely to me (if you haven't seen water in the oil or vice versa). The heater hose fitting is also back there on top of the intake, passenger's side, near the EGR (if you still have it). That fitting can leak.
