I would like to remove as much emissions crap as is practicle and beneficial. this would help with ease of maintinence and in theory, will provide more power.
Anyone out there done this? I have an '82 Wagoneer
360/727/208 with vac-dif 44 in front and 20 in rear.

The first question would be what your local emissions laws will permit. If you have annual visual inspections and tough state-run inspection stations, you probably can't remove anything.
If you don't have any inspections, you can probably ditch the following systems:
AIR pump and lines
Catalytic converter
Only ditch the EGR and its CTO if you change to a non-emissions carburetor.
Keep the engine preheat hose and snorkel air-cleaner for driveability. Ditto on the high and low-temp CTO's regulating vacuum advance on the distributor.

minnesota has no emissions inspection and I have an edelbrock 650cfm ready to go. by the way will the new carb fit on my manifold. I hvnt' checked if it's 2 or 4 barrel.

If your engine is stock, you'll have a 2-bbl manifold ('78 was the last year for the 4bbl option). The best solution would be to buy a Performer non-EGR intake to mount the carb on.
