Does anybody know of a company that has beefier steering knuckles for Dana 44 axles? I would like beefier ones to withstand the locked axles and 36 in tires while Im rock crawling. Is this a good idea or do I even need to worry about it?

If your doing heavy rock crawling, and you have a V8, ditch the dana44 and find a dana60 for the front and rear. If ts not hardcore stuff, they do make stronger axles and nuckles for it (not bigger nuckles tho, since i dont think you could fit bigger ones)

It's not the knuckles that you'll have problems with.
It's the 297-X ujoints in the front axleshafts.
But people running 36's locked on 44 fronts is very common, it's partly how you use the stupid pedal.
Worst case scenario you'll have to change out ujoints more often (when they break). I plan the same set-up.
